Dr. Pamela Koch publishes chapter about nutrition education and sustainability in the classroom.

We all want today’s students to become tomorrow’s adults who will be able to make critical decisions about our future food system. To do so, we need an integrated approach to nutrition education in schools that promotes health, ecological sustainability and social justice. In the new book, Learning, Food, and Sustainability, Dr. Pamela Koch’s chapter on the school curriculum explores how broad education about food and a healthy school environment inspire students to eat well by equipping them with the knowledge to nourish themselves, their families, and the planet.
