Nicole Scarangello is a Registered Dietitian Nutritionist with extensive experience in nutritional science and the culinary arts as a professional chef and product consultant. Nicole studied Culinary Arts at Le Cordon Bleu, has a Bachelor’s of Technology in Hospitality Management and is a graduate of Brooklyn College with a Master’s of Science in Nutrition.

Much research of the work she focuses on involves the understanding and application of federal, state, and city regulations regarding meal patterns, ingredients, and food labeling requirements. Her extensive experience in food management and operations extends to private catering, restaurants, and institutions including school and healthcare facilities.

Currently she is the Director of Menu Management for the Office of Food and Nutrition Services at the New York City Department of Education. The Menu Management team has responsibilities which encompass a variety of functions including recipe and menu development, nutritional analysis of menus and recipes, researching and developing new products and arranging student taste tastings for potential new items.

Nicole approaches her practice of nutritional therapy through the power of intuitive and mindful eating. She guides her client community by providing them with the knowledge and support to help us listen to our emotional compass and understand the chemistry of food on the body’s systems. Her philosophy is to marry the art of delicious healthy food with nutritional knowledge and enlighten all with her craft.
